Xnipec salsa

Xnipec (schnee-peck) is a great fresh salsa from the Mayans. You need: a tomato, a pepper (aji limon shown, habs are good too), a lime, and some onion, all about the same size. Mince the onion, tomato, and pepper and combine. Squeeze lime juice over them, add a pinch of salt, stir and wait a few minutes. You can add some mexican oregano or coriander or thyme if you're inclined, but you don't need to.

It's great on anything, but shines especially brightly on grilled chicken. The name xnipec seems to be the source of some confusion. Apparently it means either dog vomit or runny nose. Regardless of the etymology, it's awesome!

  1. I believe it is "Dog Nose". Dog's noses are wet and this will give you a wet (albeit runny) nose as well.
